Cooking With Spite: French Burger

Today, we’re making double-decker French-style burgers to spite a local bar and grill that thinks a burger that doesn’t come with fries is worth $16 and an hour of my life. I just… can’t with that. Let’s get into it.

Ingredients!

1 lb ground beef (we buy meat at Butcher Boy Meat Market, fat content and type is up to you)
Kosher salt
Brioche buns (I make these at home, you don’t have to)
Black Pepper Dijonaise (below)
Caramelized Onions (below)
Gruyere (the good stuff from The Wheyfarer)

Caramelized Onions
Caramelizing onions is a foundational technique: I recommend this basic recipe.
3 lbs sweet or yellow onions, sliced 1/4” thick across the grain.
6 Tablespoons butter, unsalted
Salt & Pepper

Black Pepper Dijonaise
Homemade mayo is a revelation. I use this basic recipe as a foundation.
1 cup mayo
2 Tablespoons dijon mustard
2 Tablespoons whole black peppercorns

  1. Toast your black peppercorns in a dry frying pan until fragrant. Crush coarsely in a mortar and pestle or with a rolling pin.
    Add crushed peppercorns to taste.
